Italian Sausage Soup

Ingredients:

        1 – 2 lbs of Italian sausages hot or mild, 2-15 oz. cans of stewed tomatoes, 1/2 cup Rice soup noodles or your preference of tiny soup noodles, 1 small onion, 1 green pepper, Italian seasoning, garlic powder, salt, black pepper, sugar

       Remove sausage from casings and scramble/cook.  Set aside reserving oil. Chop onion and green pepper into small pieces and sauté in reserved oil drain and set aside with the sausage.  Boil noodles until tender, drain and rinse.  Put stewed tomatoes in large pot making sure to dice any large tomatoes.  Put in 6-8 cups of water, and add seasonings to taste.  Stir in noodles, sausage, onions and peppers.  Continue to season to taste (add more water if needed) – Increase pepper for a spicier soup or use cayenne pepper.

This recipe can also be used as a “stew” served over rice.  Decrease amount of water so that you have a thicker consistency.

     Increase or decrease amounts as desired

Meatballs to Die For

Ingredients:

   2 lbs Hamburger, Bread Crumbs, Ketchup, Grape Jelly, Salt, Italian Seasoning, Garlic Powder, 1/4 cup water

    Mix hamburger, bread crumbs, salt, Italian seasoning, garlic powder and water.  Set aside.  In large pot put equal amounts of ketchup and grape jelly. Add Italian seasoning and garlic powder to pot.  Stir constantly until completely dissolved and thoroughly mixed.  Make small meatballs and continue to drop into pot, turning gently until all hamburger has been used.  Continue to cook stirring gently until all meatballs are done.

Served best over rice or mashed potatoes

Seafood Casserole

Ingredients:

This recipe can be made with any kind of flaky fish, i.e.: cod, haddock) and any other type of seafood that you like to eat

  • 1-2 lbs of flaky fish, 1 lb each of 2 – 3 other kinds of your favorite types of seafood, 2 cans Pillsbury flaky layers (biscuits), 1 can cream of mushroom soup, 1 – 8oz package each of shredded mozzarella, provolone and sharp cheddar cheeses. 
  • Seaconings:  Salt, pepper, chervil add seasonings to taste

Bake one can of Pillsbury flaky layers.  Cook fish in seasoned water until just done, remove from water and put in bowl, cook other seafood in seasoned water until just done, remove from water and place in seperate bowl from fish.  In large bowl mix soup and 3/4 can of fish stock water, remove 1/2 cup of the soup mixture and set aside.  Add the seafood to the large bowl of seafood and mix thoroughly.

Spray large baking dish with non stick cooking spray.  Split cooked flaky layers in half and line baking dish with layers.  Sprinkle a layer of cheese over the biscuits, layer fish on top of the cheese, pour the 1/2 cup soup mixture over the fish, sprinkle thick layer of cheeses, pour remaining seafood and soup mixture on top of this, sprinkle another layer of the cheeses, bake in 350 oven for 10 minutes.  Remove from oven, divide layers of uncooked biscuits and place on top of seafood and bake until biscuits are done.  Let sit 10 minutes before serving.

Seafood Chowder

Ingredients:

This recipe should always be made with any kind of flaky fish, i.e.: cod, haddock) and any other type of seafood that you like to eat

  • 1-2 lbs of flaky fish, 1 lb each of any other type of seafood you like.
  • About 6 medium sized potatoes – peeled and chopped like for potato salad (the number of potatoes can vary as desired) 1 medium sized onion, 1 large or two small cans of cream of mushroom soup, 1 tblsp margarine or 2 tblsp of oil

         Seasonings: Chervil, salt, pepper, 1tblsp cornstarch

Clean and prepare seafood and set aside.  Chop onion into thin strips and sauté with margarine or oil large stock pot.  Add to pot 4 cups of water, chervil, salt and pepper to taste and bring to a boil.  Add seafood except fish to water and cook until done. Remove seafood from pot, place in a bowl and set aside.  Add the fish to water and cook until it begins to flake then remove to same bowl as other seafood.

While fish or seafood is cooking put cream of mushroom soup in separate bowl and smooth out with wire whisk.  A small amount of liquid from the cooking seafood can be used to help smooth out the soup, after smoothing the soup stir the cornstarch into the soup and set aside.

After all seafood is removed from pot, put potatoes in and cook until tender.  When potatoes are done stir in the soup and when it begins to bubble stir in all of the seafood and let bubble for about 5-10 minutes on medium heat.

This recipe makes enough to feed 12 people – increase or decrease as desired. 

Makes great leftovers; to heat in the microwave use 30 second intervals until chowder is hot.  This keeps the seafood from getting tough and chewy and also makes less of a fishy smell in the house 🙂

*I use cream of mushroom soup because it does not have the same affect as cream for the lactose intolerant person

Lasagna Rolls

Preheat oven to 350
Ingredients:
12 Lasagna Noodles
1 lb Hamburger
1 lb Italian Sausage (removed from casing)
1 Egg
2 24oz Jars of Tomato Sauce (more/less sauce to your liking)
1 15oz of Ricotta Cheese
½ cup Grated Parmesan Cheese
1 pkg ea. Sliced Mozzarella & Provolone cheeses
Seasonings:
Salt, Pepper, Italian seasoning, Garlic, Parsley, Basil
Preparation:
Mix ricotta, egg, 1tbsp each of parsley and basil, ½ tsp each salt and pepper.
Cook noodles (al dente). While noodles are cooking, season hamburger with salt, pepper, garlic, and Italian seasoning.
Cook sausage and hamburger scrambling together.
Drain noodles and rinse with cold water. Drain as much oil as possible from cooked hamburger/sausage and mix with just enough tomato sauce to coat all of the meat.

Spray a 9X12 baking pan with nonstick cooking spray, put sauce on bottom of pan, make one layer of both mozzarella and provolone cheeses.
Lay noodles out flat and begin to layer ingredients along entire noodle:
Ricotta, parmesan, meat sauce, ½ slice each mozzarella & provolone and roll up like a jelly roll and place seam side down in pan. Put another layer of mozzarella and provolone cheeses on top and cover with remaining tomato sauce.

Cook in 350 oven for 1/2hr or until cheese is melted.
**Note: Add more or less sauce and cheeses to your liking.
